Chef John’s Jalapeño Polenta with Bacon Gravy
Serves 4
2 cups coarse yellow cornmeal
6 cups vegetable or chicken stock
2 tsp. salt
½ tsp. black pepper
2 jalapeños, seeded and minced
½ cup heavy cream
2 tbsp. butter
½ cup shredded jack or cheddar cheese
½ cup flour
1 tbsp. vegetable oil
6 strips of bacon
2 tbsp. flour
1 cup milk
1. Combine the cornmeal, stock, salt and pepper in a large heavy saucepan over high heat and whisk until smooth. Bring the mixture to a boil for 2 minutes, whisking steadily.
2. Reduce the heat to a gentle simmer and stir in the jalapeños, cream and butter. Simmer the polenta gently, uncovered, until the mixture pulls away from the side of the pan, 30 to 40 minutes. Stir it every 5 minutes with a wooden spoon. Add the cheese and stir until melted, correct the seasoning, adding salt or pepper to taste.
3. Pour the polenta into a non-stick jelly roll pan and even out the top with a spatula. The polenta should be about ½ in. thick. Let cool to room temperature and cover loosely with film and refrigerate 4 hours or for up to 2 days.
4. Fry the bacon over medium heat until crisp and brown. Remove the bacon, crumble and reserve. Add the flour all at once to the bacon grease and whisk until a thick paste forms. Slowly add the milk, whisking continuously as a thick sauce forms and hold warm.
5. Meanwhile, cut the polenta with a knife or cookie cutter into 3 to 4 inch pieces. Using a spatula, remove each piece from the pan and place in a oiled pan over medium high heat and cook until browned on each side, about 3 to 4 minutes per side. Place a piece of the fried polenta on a plate, top with sauce and crumbled bacon and serve immediately.

"I ' ll be handling the primary argument and the other members of my team will provide support.
"Okay. Give the State Prosecutor my regards and ..."
The visitor sat patiently as Mickey rattled instructions.
Finally, Mickey put down the telephone and said: "I ' m sorry for the Delay, but as you can see, I ' m very busy. What can I do for you?"
The man said: "I'm from Neotel.. I've come to connect your phone!!!"
